Claims: I claim:

1. A process for softening the sharp tips of the spines of catfish which consists of soaking gutted catfish in an aqueous solution containing from about 3.14% to 9.42% of hydrogen chloride by weight, at a temperature of from about 40.degree. Fahrenheit to about 80.degree. Fahrenheit for a period of from about 60 minutes to 180 minutes, and thereafter neutralizing the acid soaked catfish using aqueous sodium carbonate.

2. A process for softening both the tips of the spines and the chest bones of catfish to produce catfish for edible purposes which process consists of soaking gutted catfish in an aqueous solution containing from about 3.14% to 9.42% of hydrogen chloride by weight, at a temperature of from about 40.degree. Fahrenheit to about 80.degree. Fahrenheit for a period of from about 210 minutes to 480 minutes, and thereafter neutralizing the acid soaked catfish using aqueous sodium carbonate.

3. A process for softening the chest bones of edible fish which process consists of soaking scaled and gutted fish in an aqueous solution containing from about 3.14% to 9.42% of hydrogen chloride by weight, at a temperature of from about 40.degree. Fahrenheit to about 80.degree. Fahrenheit for a period of from about 210 minutes to 480 minutes, and thereafter neutralizing the acid soaked fish using sodium carbonate.
