Abstract: A tangy or yoghurt-like dessert is prepared by reconstituting with milk a dry-mix composition containing pregelatinized starch, an edible acid and a hydrocolloid gum. The hydrocolloid gum is preferably a mixture of guar gum and xanthan gum.
